Rogan Josh gets its warmth from Kashmiri chillies, but the real work happens in the onions: caramelised low and slow until the base turns rich and sweet, then lifted with roasted fennel and ground ginger.

Sauté: Start with your marinated protein or vegetables in a hot pan. Sauté for a few minutes to get some colour.
