Standard Japanese curry roux blocks contain a long list of additives — emulsifiers, flavour enhancers, preservatives, and often MSG. These aren't there for flavour. They're there to extend shelf life and reduce production costs. Emma Basic worked with its supplier in Japan to remove every one.
What's left is a roux built on fat, flour, and properly blended spice. It behaves the same way in the pan — dissolve in stock, simmer until thick — but the flavour is cleaner and more genuinely spiced.
