Premium grade vs culinary grade: what you're actually buying.
Culinary grade matcha is made from older leaves harvested later in the season, after the best leaves have already been picked. It oxidises faster and has a bitter, astringent flavour that works when mixed into a latte or baked into a cake — sweetness and other flavours balance it out.
Premium grade matcha uses first-flush Tencha leaves — the youngest, most shaded growth of the season. Emma Basic's are covered for 25 days before hand-picking, which forces the plant to produce more chlorophyll (the deep green colour) and develop natural sweetness and umami depth. The flavour is clean and complex enough to drink whisked in plain hot water.
