It’s harder to make good white wine with no added sulphur than good red. Not least because the tannin in most red wine also acts as a preservative… but Vinceremos love this dry, elegant white from Piedmont in north-west Italy. Sometimes dubbed ‘the Chablis of Italy’, Gavi is a classy white with delicate stone and orchard fruit and some minerality. Well rounded and delightful with poultry/fish and light pasta dishes.
