Emma Basic Udon Noodles 250g
The bowl of comfort after a cold walk home.
About
The simplest noodle. Why it's the best bowl.
Udon is three ingredients: wheat flour, water, and salt. The dough is worked until the gluten develops enough to give the noodle its distinctive chew — that's the whole process. Nothing else goes in. The thick, pale strands are as close to neutral as a noodle gets, which means the broth does the talking.
Emma Basic's dried udon rehydrates to a proper thickness — closer to Sanuki-style than the thin versions you find in most supermarkets. Cook for eight to ten minutes, rinse, add to your broth. The noodle will continue softening in liquid, so serve immediately after the final rinse.
