Why tofu puffs absorb flavour better than firm tofu.
Tofu puffs are made by deep-frying firm tofu at high temperature until the outside forms a golden, honeycomb-structured skin and the inside becomes open and airy. The porous interior is what makes them different — where firm tofu has a dense, closed texture that resists absorbing liquid, tofu puffs draw in whatever broth or sauce surrounds them.
Simmer them in dashi and soy for five minutes and they become a different ingredient entirely — flavoured all the way through. They're the right addition to miso soup, agedashi, hot pot, and any braise where you want the tofu to carry the flavour of the dish rather than sit passively in it.
