About
The mushroom that changed Italian cooking.
Porcini (Boletus edulis) is the most prized mushroom in European cooking for one reason: depth. Fresh porcini are seasonal and expensive; dried porcini are available year-round and arguably more useful — the drying process concentrates the flavour into something close to pure umami. A small handful rehydrated in warm water transforms a risotto or pasta sauce.
To use: soak in warm water for twenty to thirty minutes. The mushrooms will soften and swell; the liquid turns a dark, intensely flavoured stock. Reserve the soaking liquid (strained) and use it in the dish. In risotto, substitute part of the stock with porcini soaking liquid. In a pasta sauce, reduce it into the base. It adds a bass note that no fresh mushroom can replicate.
